As we're hopfully approaching the end of winter, I'm still experimenting with vegetable soup.
The soup above was thickened with rice and a bit of vindaloo curry paste was added to give it a kick.
In contrast, the soup below was thickened with a beetroot cutlet and millet and looks a lot less plain:
To make a full meal, I like to make cheese sandwiches to dip into the soup.
Plus, when the soup has dried up, I put cottage cheese on top to help polish off the remaining
vegetables.
